Ingredients
- 6 Hawaiian Rolls, ripped into small chunks
- 1 cup Mango Chunks, frozen
- 1 tsp Ginger Powder
- 1 tbsp Brown Sugar
- 1 cup Coconut Milk Lite
- 1 Lime, juiced and zested
- 3 Egg Whites
- Whipped Cream, for topping
Directions
- Spray an 8 x 8 glass pan with cooking spray.
- Place bread chunks and mango in pan.
- In a small bowl, whisk together egg whites, coconut milk, lime juice, lime zest, ginger powder. and brown sugar.
- Pour mixture over bread and mango. Let sit for 10-15 minutes.
- Heat oven to 375 degrees.
- Bake for 30-35 minutes or until golden brown.
- Serve warm with whipped cream.
