This toasted almonds snack recipe was created to be a healthy option to one of my favorite desserts, lemon meringue pie. I work from home so I tend to have a bit of a snack problem (as in, I eat too many…). Working from home allows a whole host of distractions, snacking being just one. I made this recipe one day because I was craving lemon meringue pie. I had also just finished a bit too much pasta. Feeling a bit bloated, I decided to try my hand at a healthy lemon meringue option. These toasted almonds offer a great nutty base for the delicate lemon flavor with it’s own graham cracker crust. Take these lemon meringue toasted almonds to any party for a sure wow!
Ingredients
- 1 cup Almonds, unsalted
- 2 tsp Coconut Oil, melted
- 1 Lemon, juiced and zested
- 3 Graham Cracker Sheets
- 1 tsp Brown Sugar
- 1 Egg White
- 1/8 tsp Cinnamon
- 1/8 tsp Salt
Directions
- In a medium bowl, add almonds, coconut oil, lemon juice, and lemon zest.
- Marinade for 2 hours.
- Preheat oven to 350 degrees.
- Drain excess liquid and add egg white to bowl. Toss
- In a food processor, combine graham crackers, brown sugar, cinnamon, and salt until powdered.
- Toss almonds with graham cracker mixture in a large, ziploc bag.
- Line baking sheet with parchment paper. Spread almonds evenly.
- Bake for 8-10 minutes, or until toasty brown.
