Toasted Almonds with Lemon Meringue Topping

This toasted almonds snack recipe was created to be a healthy option to one of my favorite desserts, lemon meringue pie. I work from home so I tend to have a bit of a snack problem (as in, I eat too many…). Working from home allows a whole host of distractions, snacking being just one. I made this recipe one day because I was craving lemon meringue pie. I had also just finished a bit too much pasta. Feeling a bit bloated, I decided to try my hand at a healthy lemon meringue option. These toasted almonds offer a great nutty base for the delicate lemon flavor with it’s own graham cracker crust. Take these lemon meringue toasted almonds to any party for a sure wow!

Ingredients

  • 1 cup Almonds, unsalted
  • 2 tsp Coconut Oil, melted
  • 1 Lemon, juiced and zested
  • 3 Graham Cracker Sheets
  • 1 tsp Brown Sugar
  • 1 Egg White
  • 1/8 tsp Cinnamon
  • 1/8 tsp Salt

Directions

  1. In a medium bowl, add almonds, coconut oil, lemon juice, and lemon zest.
  2. Marinade for 2 hours.
  3. Preheat oven to 350 degrees.
  4. Drain excess liquid and add egg white to bowl. Toss
  5. In a food processor, combine graham crackers, brown sugar, cinnamon, and salt until powdered.
  6. Toss almonds with graham cracker mixture in a large, ziploc bag.
  7. Line baking sheet with parchment paper. Spread almonds evenly.
  8. Bake for 8-10 minutes, or until toasty brown.
