Salad with Beets, Oranges, & Goat Cheese

This salad with beets may not appeal to everyone, but since I was a kid, I have had an affinity for beets. I’m still not sure where it came from since my parents have always hated them. Either way, I love them canned, pickled, roasted, you name it. I usually make this salad with beets, oranges, and goat cheese as an easy and healthy weekday lunch (my boyfriend hates beets as well so dinner is a no go…). With just a couple easy steps, you’ll have a nutritious meal on your plate within minutes.

Ingredients

  • 2 cups Arugula
  • 1/2 Can of Beets
  • 1/2 cup Mandarin Oranges
  • 1/4 Red Onion, thinly sliced
  • 2 tbsp Goat Cheese, crumbled
  • 2 tbsp of Salad Dressing (your choice!)

Directions

  1. Rinse and dry arugula. Toss with dressing (*I use a large tupperware to shake up the lettuce and dressing for salads).
  2. Spread spinach on plate. Top with beets, oranges, onions, and goat cheese.
  3. Eat.
