Ingredients
- 1 Yellow Onion, chopped
- 1 lb Ground Chicken
- 2 tsp Turmeric, ground
- 2 tsp Coriander, ground
- 2 tsp Chili Powder
- 1 tbsp Garlic, crushed
- 1/2 Lemon, juiced and zested
- 2 cups Chicken Broth
- 1 cup Carrots, frozen
- 8 Artichoke Hearts, halved
- White Rice, cooked
Directions
- Spray large saute pan with cooking spray,
- Add onions. Cook until slightly clear.
- Add chicken. Cook about 15 minutes until cooked through.
- Add turmeric, coriander, chili powder, and garlic. Stir, cook for 1-2 minutes.
- Add lemon juice, broth, and carrots. Stir and cover.
- Cook, covered, on medium for 20 minutes.
- Simmer, uncovered, on low for 30 minutes.
- Add artichoke hearts, cook for 10 minutes.
- Serve with rice.
