Some people say cucumbers taste better pickled so why not try this unique take on traditional cucumber tzatziki. Traditional tzatziki includes cucumbers, dill, and an acid, lemon juice. Pickles are not far off with cucumbers, dill, and an acid, vinegar. The additional honey tames the extreme vinegar taste while adding a hint of sweetness. Ingredients
- 2 Large Dill Pickles
- 2 cups Greek Yogurt
- 1 tbsp Honey
- 1 tbsp Pickle Juice
- Pepper, to taste
- Pita, for dipping
Directions
- Cut pickles in half. Use a spoon to scoop out the inner part (the seeds and goo).
- Slice pickles thinly and place on a paper towel.
- Top with another paper towel and let sit (in the fridge) for 1-2 hours.
- In a mixing bowl, combine pickles, Greek yogurt, honey, pickle juice, and pepper.
- Cover and let sit (in the fridge) for at least 1 hour (the longer the better).
- Serve with fresh pita, pita chips, or veggies.
